I liked the way riding pigs felt gameplay-wise. It takes a good bit of time to get a Zombie to drop a carrot or to find an NPC village unless you get really lucky, then you have to get a farm going, then you have to find a dungeon so you can get a saddle. You still have to get a saddle for horses, but the requirement to feed and breed them, wheat, is simply just so much simpler to get than carrots.
Riding pigs is weird, huh? What is Minecraft? Normal? I thought punching wood to get logs and floating islands and exploding green 4 legged creatures was pretty normal, too. Pigs can still serve as cheap transportation when horses are not around.
They also serve as a food source but I think their meat output should be buffed and/or cow meat output nerfed.
With leads and the ability to fly ( lots of servers allow players to fly in certain circumstances ) you can have flying pigs and with saddles you can have players riding on flying pigs.

Depending on the world I'm playing it would either be horses as a faster transport or by rail my village/world project.
Either way horses are better than riding pigs but if you cant find a horse then use a pig until you can locate and tame a horse.

I still say pigs, horses are basically the most worked on mob in the game. They aren't as complex in design as endermen, the enderdragon, withers, or ghasts, but they have many more features for them. An inventory, armor, saddle storage (for riding or storing), different variations (Cats do as well, but they aren't meaningful, as horses have different health values and speed), donkeys, mules, blocks that allow them to breed, high jumping, riding, and they look un-vanilla if you understand that.
What does every other mob get? One update, one variation (other than cats and of course cave and normal spiders), and then they're never looked at by Mojang again. They should be focusing on upgrading and enhancing mobs like sheep, squids, chickens, pigs, and cows. Not dedicating an entire update to one mob.

Though I don't show regret for having horses the way they are; you're definately right for other mobs. All current "non-tameable" mobs are in serious need of ugrading; besides really cows and sheep, all passive animal mobs are worthless as a less superior food source and squid's black ink is made redundant by black sheep. I seriously hope the passive mob list is either expanded upon and the mobs included buffed, made more useful, or at least more attractive as an aesthetic mob.

I've often wondered why wool blocks don't have the same texture as the wool on the sheep. I'm not saying I like the wool block texture, but some consistency would be nice, aesthetically speaking.
Back before horses came along i was content with finding a few pigs and a village or chancing a zombie drop. Now, I look for horses, but if it was up to me i would take them out.
Horses win. In nearly every way they are superior to the pig.
That depends on whether you're judging the implementation or the concept of the animal as a mount. If their abilities were swapped, we'd all be laughing at horses.

Pigs are good if you want to have fun or are desperate. I do think that taming horses could be a tad more difficult than just constantly getting on and off and on, just to balance it out.
But as Sh4rp_Blade15 has said, why aren't the other animals just as complex as horses? Different wolf breeds so that each dog you get is slightly different. Cows that are black and white, light brown and white or have no white at all! All animals dropping meat (makes sense). Chickens with all different colours (as a chicken owner I am unimpressed by how unremarkable chickens are in the game). Ocelots that don't have the exact same spot texture every time you meet one. More realistic breeding of chickens (and chicks that are yellow). Babies that gradually grow and can have the growth accelerated. Better spawning (pigs could be in most biomes, especially swamps, while cows can only be found in Plains, etc). Cows, horses, pigs and chickens eating at the grass to heal (or maybe even naturally go into a breeding state!). Wolves killing more than just sheep, but also restraining a bit so that they don't completely demolish the population. Animals not spending half their lives bopping up and down in water. Different animals being able to be force fed different foods (that make sense) to heal them. Chickens sometimes shedding their feathers (I hate to kill my poor chickens just for feathers). Animals that sleep during the night. Maybe even males and females (that's a stretch though).
One last thing: I've noticed that one reason why horses look...out of place compared to other animals is because they've been modeled more realistically while the previous animals have not been updated what so ever. Horses have protruding faces with eyes to the side and even ears that stick out, just like in real life. But cows in-game have completely flat faces, with only horns sticking out. The least the developers could do is make the nose of the cow protrude out a little, just like what they did with pigs in Beta 1.8.
