I knew this would happen if you went from snapshot back to 1.7.4 or earlier but not if you went up. Is this going to happen server side as well if we go from whatever snapshot we are running to the end result 1.8?

1.7.5 does not come after 1.8. Going from 1.8 snapshots to 1.7.5 is still considered downgrading, and backwards compatibility is generally not something Mojang will go out of their way to handle. As Spyrohabru33 has said, going from 1.7.x (or any snapshot) to 1.8 will be fine.
For 1.8 they changed entity IDs from arbitrary numbers to text names in anticipation of the plugin interface. 1.7.x doesn't understand the text names in that context and thus will delete the items, thinking that they are not present in the game.
It is a bad idea to go back to an older major version, generally speaking, it's not just in the case of 1.8 and 1.7. Before doing any sort of downgrading you should always back up all your worlds that will be affected.
I wonder how many players have been screwed because Mojang refuses to implement the most basic programming concept in the world: a flag in the file to prevent an older version of Minecraft from loading a world played in a newer one.
My head won't stop shaking at the outright contempt of players because of this....
If only such a thing were to be implemented. We wouldn't have to worry about placing all worlds into a single separate folder everytime we wish to downgrade. and then back. That is a major inconvenience.

True, but the silver lining is that these snapshots are teaching Minecraft players some very valuable lessons (albeit, the hard way). Like:
- Don't run your regular worlds in the snapshots without backing them up.
- Running snapshots can have unintended side-effects.
- Don't swap between snapshots and full versions on the same world.
- 1.7.x is a lower number than 1.8.x (which should be obvious, but apparently isn't).
Of course, I'm also the type of person that feels that children will automatically learn to not stick forks in electrical outlets after the first time they stick a fork in an electrical outlet.

But 1.7 can read the descriptive text names. All 1.8 did was remove the number IDs.
