Hey all, thought I'd weigh in on the new snapshot.
Before you reply, yes, I am aware that this is a work-in-progress and I don't expect everything to be finished or that there should be no bugs. However, I do want to offer some knowledge and my opinion on some of the new features. We'll go through them piece-by-piece.
Carpets:
First off, the crafting recipe is a balancing failure. I'd never make these in survival, even on my server where I have tons of wool just sitting around. Very cool idea though, and I'm happy they introduced them. Looking forward to the finished product.
Horses:
Very good job Mojang! Impressive, even if most of it was from Mo' Creatures. I support this.
Horse saddles:
Now the criticism. We already have saddles. It's completely unnecessary to make a second version of the same thing. Just take them out and make a recipe for the original saddles, Mojang is kinda wasting people's time with this one to be honest.
Horse Armour:
First off, it's called Barding. Google "Horse barding" and you'll see. Not armour. Secondly, balancing factors should be considered. I personally haven't tested exactly how much damage the diamond horse armour repels, but from what I hear it's quite alot. Minecraft isn't really interesting if it's impossible to die. I'd be much happier if they made it just leather, gold and iron barding, simply for balancing if nothing else. And if you could dye the leather barding... yes yes yes!
Leashes:
Kinda cool, but I personally think they should be restricted to tamed animals only; for example, leading your dogs and cats around lava pools, etc. Putting them on any animal really seems to only make things too easy, and we already have a way to make animals follow us.
Hay Bales:
They have little to no use right now, so I don't have an opinion. Cool texture, I guess. If they acted as a Wheat Block this would be, IMO the best way to do it. Would lead to really cool storage options for your wheat farms.
Respiration enchantment:
Makes you see underwater. Finally, I've waited a long time for this. No criticism, just happiness.
Things I think should be added:
Saddlebags:
Self-explanatory. A few extra inventory slots on your horse! Would either replace barding or would be included in leather barding.
A Horse UI:
To make putting saddles/barding on easier, and to facilitate the above. Similar to a chest or furnace pop-up screen if you're not clear on the meaning of UI.
On Java 6 and OpenGL 2.0 useage:

There won't be much of a difference between Java 5 and Java 6. The only thing is it allows access to more classes when programming. Which this then allows a bit more functionality and flexability when it comes to programming Minecraft. Which because of this they might be able to optimize the game itself a fair bit more, boosting the FPS. Which would explain why they were teasing a bit about the new graphics engine that would be rebuilt, which they need or will use the new functionality in Java 6 to make it.

Well there is a mule texture called mule.png, and also a donkey texture called donkey.png but I didn't see any horse textures where they already had a name like "Mule" I'd remember because I would have thought that very odd.
The saddlebag idea seems awesome. Also, I don't understand why using the horses from Mo' Creatures is a problem, its a solid mod and using its resources requires less time before its in the game.

A double resolution texture pack that stays faithful to the original Minecraft textures.
If it happens to have a specific name itself I really don't see why they wouldn't use it. For an example if they had called the pickaxe the "stone digger" you would probably have some criticisms. I happen to own horses and know a lot about mediaeval warfare, so this is roughly the same for me.
For another example for redstone people, if they had called the comparator the "3 input repeater" or something that obviously would have looked silly to people with a background in electronics, which redstone is based off of.

NO! They should keep inventory space restricted to donkeys and mules. Gives player a trade off. Do I go for speed or for items?

It already works partially, you can put a chest on a donkey, only it doesn't go on the donkey it goes "in" the donkey, thru his rump. What you see is like a somewhat (30%?) smaller than normal chest front sticking a little out of the donkey's upper thighs on both sides of the donkey's rump. It does look kind of like saddlebags that way, we don't know what kind of inventory the chest will have because the gui pop-up doesn't work yet, right clicking on the chest does nothing right now.

The texture will depend on which texture pack your running, plus being able to put down colored carpeting on your floor without either also having it for your ceiling on the floor below or building two layer thick floors is something many people have been asking for for a long time. The thickness of the building blocks in Minecraft already makes it very difficult to build scale models of real structures correctly and then when you add 2 meter thick floors it really ruins any chance you had of being faithful to the original design.
I'd hope texture packs will put little fringes on them at least, with connected textures that'd be really cool
First things first i think that maybe it has these rule so u only can use one dye for each color but the green dye creates a creeper face how about that???
so if u use horses u can ride em fast and control em,
but i guest maybe that chariots can control their speed just by using the front and back buttons

There are already 16 colors in the snapshot texture pack "cloth_0" through "cloth_15" from Mojang and the texture pack creators are already gearing up to work on modifying their own packs now that they know what many of the new texture images they will need are.

Besides, they have other uses besides just looking nice, they can be used to hide lighting effortlessly, they can hold back water like a sign, and they are the only block as far as I know that can both properly interact with pistons and doesn't have a hitbox.
No about the leashes for tamed animals only, its great being able to leash onto other animals too. I hope they add the ability to put the leash on villagers too. Then i could get a gallows set up in my village.

I agree. Also I can't wait for the donkey chests to work! It's way better than my old backpack idea. Also I hope they add carts the horses can pull.

No its not. you would not use the same saddle that fits a pig on a horse now would you? (yes people ride pigs.)
