I agree with some of your ideas of what may be coming, but I really doubt Ghasts will come out of Nether portals. The Nether is large and open, great for Ghasts to fly around in, but having them come into the Overworld would probably look really weird in some cases (and would probably lead to people making Overworld Ghast farms).
There are more problems with this, like the amount of space Ghasts would need to even spawn, and the destruction they would cause. It would Probably be extremely easy to farm them to because Ghasts are extremely slow in liquid and would simply drown.
Yeah, they didn't allow it on iron and gold because it could be easily abused by replacing and re-mining.
Also, they do NOT need to double mob health or damage, but maybe add a larger gap between easy, normal, and hard. The difference in these different difficulties is so small, I think that it should just be a wider gap, with Hard being about 1.8x the health and damage with mobs compared to easy.
Another thing is, full enchanted diamond armor is not something you get in 5 minutes. So by doubling the mob health AND damage, you may be having fun with your full sets of enchanted crap, but when you load up a new world and get one-shot-sniped by a skelly, it wouldn't be very "fun". I think the game is balanced enough as it is, but maybe they could lower iron armors strength a tiny bit, as it is easy to acquire and nearly makes you invincible on Easy and Normal.
Also, maybe they could have a difficulty above hard (not hardcore) called "Insane" or something. Then they could double or even triple the mob health/damage, making that a difficulty for truly skilled minecrafters who like a challenge.

I would like a flying mob, but it might end up the same situation with ghosts in mo' creatures where they pretty much sit on your head and the damage pushes you against the ground pretty much nowhere to go so you would die instantly.

Anybody else agree it's time we got a new mob? Been awhile since the last new one.
I think we could use MANY new mobs. Love the game, but the amount of different mob types has ALWAYS seemed very low. Going into something like the Mo' Creatures mod with it's vast assortment of different hostiles is often quite refreshing from just skeletons/zombies/creepers over and over half the time. And some of the mobs we DO have now are so rare that they may as well not exist (magma cubes, Blazes which ONLY spawn in spawners, even Ghasts hardly spawn lately)
It's not going to be in the next update, but I would like to see a "builder" villager that extends villages as it fills to capacity.
Under no circumstances do I want villagers building ugly little houses in my world. That's my job.
In fact I'm putting that in my signature.
It would be neat if you could 'talk' to Iron Golems (or a special villager) and they'd tell you how many homes are in the village, though.
I think we'll get a new structure, minor tweaks to either the xp system or the enchantment system, and a new block or item.
On my hope list is; some item you can craft to help you locate villages (like the Ender eye helps you locate strongholds), different colored wood stairs, Enderstone stairs, slabs and fences, village sounds, implementation of that Zipline mod, and, more than anything else, a fix for these damn lighting bugs.
And one more thing. I would like to see villagers react to you burning down their home.
What if you made them a wooden home and wanted to remodel it? Then again, compared to other ways of knocking down a home(pickaxe, axe) a flint n' steel would have a different connotation. Don't feed the bears!

And I don't even know why they even did that in the first place. Maybe an option to turn it into a server as you're playing, so your friend can join you, but once they've left, go back to no server again. It sucked that I couldn't pause it in the relevant snapshots.

I would like to see a new kind of long grass that suits the swamp biome to make it seem more swampy. And more difficult mobs.
Oh, they should make it so that there is bark on the top of the log at the top of trees, but that may be a bit hard. And pigs could be controllable when riding with the use of reins (possibly made with string). W to speed up, S to slow down, A to TURN left, and D to TURN right.
