I only ask because things like the jungle actually will not appear on maps that pre-date the jungle update. I'd rather find out now rather than explore a giant chunk of my map only to find nothing.
I don't think there has been anything that hasn't appeared on old maps in new chunks
This has been my experience too. It would seem silly that Mojang would create new features in Minecraft and not make them compatible with others. There is a process to this, you know. If you are having problems with maps in regards to chunk updates and new features, I would chalk it up to a bug that's the exception rather than the rule. Checking the changelogs and bug lists to see if others are having similar problems would always be recommended.

I'm not sure if this is still the case, I sure hope it isn't.
Got a map from 1.5 and have jungles in it
the Anvil generator converted all old maps to Anvil format meaning old maps would now be able to generate new stuff in new terrain.
to find the emerald ore or new generated bio-villages would most likely require some exploration.
unless they did some coding magic to add the new ore to existing terain.
You should wait.
