I have had the same issue as you, sir. I have accommodated from going only 5-10fps to now I am getting up to 80-100frames by lowering my graphics from 'fancy' to 'fast and turning off bobbing and lowering your render distance. Hope this helps. And I feel your pain.
I'm not having any issues at all, but have a very powerful machine. They need to find a balance between performance and features.
On a less powerful machine, changing the frame rate to 60 from 120 does wonders and is still plenty fast enough. Even 30 is tolerable. Change the viewable distance from 16 to 12. If you load texture packs, load the lower rez ones.
If you have a 64-bit machine, read how to let Minecraft use more than 1 gig of RAM. I've given it 4 and it blazes along.
You do have to upgrade things....... you cant always play on something old and outdated. Games like MMO's and MC have to keep updating to stay with the the times really to compete against the newer games that are coming out
Btw if your computer cant handle MC 1.7 lol then you must have a bad and very outdated computer
If it's any consolation, I know some ways to make the game run smoother...however, it does include lowering graphic quality...
Instead of "Fancy", use "Fast". Let me enter Jungles without entering Laggy Town.
Lowering the render distance too. I suggest normal (I honestly dun't know what it equals in chunk size). Small or tiny work even better, but you need a clock to tell time well.
Ridding yourself of smooth lighting. Not the best, but it helps.
Avoid fancy-shmancy resource packs. I've had a few crashes because I used a pack too fancy to handle, even with all the limits set above.
I'm honestly trying to help you. Minecraft certainly isn't the best game in the world, but it is a good one. I can't get a better computer, but I use these to try and keep this game running. Sorry if these changes dun't work for you. To each man (or woman) his (her) own, as I say.
Dont forget to put your UI to Normal or Small it will help
Despite all the contrary speech in this thread, I can agree with OP- I have an i7, overclocked to about 4.5, two gtx570's and 16GB RAM so the problem does not sit with my rig.
With the last few updates my frames have been getting worse. And now with 1.7 and the 1.7.3 snapshots I've been getting the most ungodly unstable frame drops and choppy gameplay, to the point not wanting to play the game.
Did they need to rewrite the server coding to be more client based, when the server machines hosting the game and the old server code had no problems? No, and now the servers I host are riddled with bugs and errors all over the console.
Did they need to rewrite every line of code in the game to 'optimize it' and prepare it for better support later on? No, and now all the modders out there are still reeling in confusion weeks after the first snapshots came out.
I think the problem is in mojangs 'optimization' and fixing problems that didn't exist.

I have a slightly less powerful set of a hardware (Core i5 2500K overclocked to 4GHz, GeForce GTX 560 Ti, 16GB RAM, and an SSD), and 1.7 does not perform as well for me either. The actual frame rate may be similar-ish (plus or minus), but it hitches more despite that, and chunk rendering is also slower than in prior version. It's playable though.
I wasn't saying that Minecraft has no issues regarding performance (the latest version is also one of the buggier releases I've seen), but at the same time, the OP is talking about single cores. When I think of that, I think of either older CPUs, or lower clocked, cut back versions of modern ones, usually paired with budget amounts of RAM and whatever cut back IGP hey have with them. If higher end hardware can arguably lag, then imagine most examples of something like a single core CPU (I'm aware Minecraft is largely single-threaded, but still). That was the gist of my prior post.
you're going to have to penny pinch for a while and save up for a new computer. you're going to need a new one for other reasons eventually. just pocket change and save a little every once in a while in about a year you can get a cheap upgrade for $200. you cant expect to keep the same computer your whole life.
all that aside minecraft have been having VERY inconsistent performance issues on all systems in recent updates. just reading through this thread you can see how 2 people with identical systems can have totally different performance with minecraft. I do think allot of the lag and inconsistent performance is due to poor optimization of all the new features. though some of the probablems are user based a majority are due to minecraft itself. I have ALWAYS lagged with minecraft both server and single player so I've gotten used to it. I can only hope that one day I'll get a better computer and Mojang will fix allot of its performance bugs.
Installing optifine and turning the render distance are just putting a band-aid on the problem. I'm sorry, but its best to just save up and get a new computer. Games evolve and will need better hardware to run on, and eventually we just need to replace that 7 year old intel laptop.

Actually I'm pretty sure it's generally because they take terrible care of their computer if it isn't old/crappy hardware; either out of laziness/stupidity or simply ignorance.
For example, my younger brother's computer runs absolutely terribly. Part of it is because it's old, but it's mostly because it's riddled with viruses and incredibly dirty. He, for whatever reason, refuses to scan with Malwarebytes or SuperAntispyware (he doesn't even update them on the rare occasion he even does scan) and I'm pretty sure he watches a ton of nasty porn online (apparently porn sites carry tons of virsuses), so naturally he can hardly play any games on his computer at all even though his hardware should be capable of it.
He's the prime example of laziness and stupidity, lol. Sorry, kinda started ranting there for a minute. ehehheh
But anyways, I talked to the guy who I hired to build my new computer, (yeah, I'm lazy when it comes to hardware lol) and according to him most people he is hired by will have computers that run absolutely terrible because of what I stated already. Even gamers with very expensive computers. -shrug-

My posts will always have typos and that fact will always drive me crazy.
I had the same problem when it came to 1.7.2. Lag once in a while where it was frustrating when in the middle of a mob and it occurs. Someone told me to put MipMap to 0 and it works so far. I don't know what that even does.
Like some people have already pointed out, Minecraft actually isn't too intensive of a game. I remember before I built myself a new PC in November 2012, I was stuck on an old Toshiba laptop from 2008, with a 2.26GHz Core 2 Duo P8400 and a 512MB DDR2 Radeon HD 3650M. The laptop also had 4GB of DDR2-800 RAM, although I later paid through the roof (DDR2 is very expensive...) to upgrade it to 8GB. That 2008 hardware couldn't run any newer games at acceptable frame rates - even on low detail settings - but I was still able to play Source engine games fine, as well as Minecraft. I could run Minecraft with the render distance at far, along with fancy graphics and usually see between 30-50 FPS.
I think you have some other issue bogging down your gameplay, such as malware or too many applications running in the background.

It kinda makes Minecraft a bit more laggy the more updates they release,I think Mojang should hire someone who is superb in coding to remove the lag..
