While I do strongly agree with you, you have to acknowledge the fact that minecraft is a creative game. The point is to build stuff and thrive. I think the community wants to do that without the impossibility of finding certain materials and such. But otherwise yes I do agree that minecraft survival is extremely easy.
As (if I recall) someone said earlier, yes, building in Minecraft is challenging. But no, Minecraft is not a building game; it is a sandbox game, and Minecraft in particular contains things that appear to intend to please everyone; you've got building (in both traditional building and redstone circuitry), combat, and exploration. However, the only aspect of Minecraft that truly excels over other games is building. The combat is pathetic, ranging from mediocre at best (fighting ghasts and the Enderdragon) to a joke at worst (the Wither). Exploration is almost nil due to the terrain, and even if you like it, there's no denying that it is incredibly predictable (not to mention that exploring all of the structures besides mineshafts is incredibly easy due to how combat works).
So, Minecraft should offer a (optional) challenge of some sort in every aspect of the game, or at the very least should be fun. Currently, the only aspects of the game that offer one are building and survival if you are a newbie. In terms of combat and death, it simply doesn't offer one. What if there are some players that want to experience a challenge in those areas? Well... sucks to be you, as it seems like the closest opportunity for a combat update is 1.6 or 1.7 (more likely 1.7 since Mojang will hopefully work on terrain in 1.6)
TL;DR (because I rambled again): Give some examples. While some of the deeper features in Minecraft such as building can be hard, building is just about the only challenge in the game that isn't self-imposed or part of the mild learning curve.
While Minecraft shouldn't be as hard as IWBTG or maybe Dwarf Fortress, it is definitely way too easy. I see threads popping up all the time nowadays complaining about the difficulty. Why? I don't know for sure, but perhaps it's because Mojang is adding all sorts of ways to make Minecraft's real difficulty lessen such as enchanting, hunger, sprinting, and the new armor system, yet isn't adding in new things that add difficulty back in. And when Mojang does include something that makes the game harder like Endermen or abandoned mineshafts, it's usually either optional/easy to avoid or adds fake difficulty (and sometimes both; i'm looking at you, Wither).
Minecraft is not a building game, it's a sandbox game? Do you know what a sandbox is? You do understand the lofty concept of 'sandbox', and that the only logical purpose for a sandbox is to build, right?
Oh, and you want me to give you a list of 'challenging times in minecraft'. Though you did not specify what strand of minecraft, i'm guessing you mean survival. Ok, I shall
Constructing and defeating the wither
Killing enough endermen and blazes to find the stronghold
Defeating the enderdragon
Hardcore survival
Constructing a 40x40 wheat farm with one seed
Building a scale replica of the Hoover dam with flowers
Just to name a small few.
And just to remind you (as you seem to have forgotten) this topic is about how minecraft was challenging, but now anyone can play it. From what you said, you seem to think that minecraft was always easy, but pre 1.8 minecraft's is justified because it had better terrain. How does this make any sense?

I'll reply to this post later on this same reply. As of now I'm going to bed. Good night to you all!
if you play more then a year its easy. ive been playing for almost 3. but its not easy for noobs :b
Lol, one of my friends has been playing since before 1.8 and he doesn't even know how to fight mobs, kill animals, or just plain survive! (No offense to him) Good night!
Greets. I'm new so please take my opinion with a grain of salt.
that said. I kinda feel that MC is too easy as well. Within in no time you can have a house up and a farm going. where's the survival in that. I've even made a thread or two asking if there were servers who have Super Duper hard settings. I have found a very few handful of servers that are attempting to make things ridiculously hard. some of the mods/servers I saw in this thread I will take a look at. but for the most part. I have nothing to really push me. Maybe I don't have the minecraft alpha/beta mindset, but I would like to have exposure elements in MC(in snow biomes you gotta tack on extra garments/furs or you'll slow down and freeze to death unless your by a fire. in desert biomes, you need to be damn near naked unless you dip yourself in water from time to time etc)
I dunno, it just seems the most fun I have on a server is the first hour or so, when I have nothing in hand and I'm beating back zombies/spiders and surviving on apples, fish, zombie flesh until I find that "perfect" spot.
Eh, I can see people who are really into hard games can find it to be too easy. But I personally like it the way it is. I just wish items that you drop after dying didn't disappear after 5 minutes. (Which would actually be the opposite of too easy, lol)
There're so many mods that can make it more of a challenge though. So I don't really see it as an issue for people who want a harder game.

Congratulations, you explained what a sandbox does. A sandbox game, however, is not simply just "a game in which you build". A sandbox game is just a game with no restrictions (e.g. nothing will prevent you from entering a stronghold if you find one, you do not need to reach a certain point in the nonexistent plot) and a wide open world. Minecraft definitely fits that definition, as do games that could be put under different genres like Skyrim (there is a main story but it's pretty unimportant).

Constructing and defeating the wither
Literally not a challenge. The Wither is a gear check and thus requires no skill and therefore no challenge.
Killing enough endermen and blazes to find the stronghold
That's more tedious than challenging, and there are easy ways to get around the more challenging parts like using fire resistance potions for the blazes.
Defeating the enderdragon
The Enderdragon, while he isn't a gear check, is still a laughably easy boss. All you do is shoot crystals and shoot the Enderdragon. If you get hit, it's only a problem if you're on a tower or near the edge of the End.
Hardcore survival
How many times do I have to say that hardcore adds no challenge?
Constructing a 40x40 wheat farm with one seed
That's not challenging, that's just tedious.
Building a scale replica of the Hoover dam with flowers
I have already said that creative mode is already challenging in it's own way. It's fine as it is. (Good luck finding a place to build the dam, though.) I could build a scale model of Big Ben if I really wanted to, but for me building isn't as fun as surviving... but that's not a challenge, and I like challenge.
Just to name a small few.

While I do dislike the post-1.8 terrain, it doesn't have much to do with adding or decreasing challenge (and I never said that it did). However, it does vastly increase the amount of caves so that it's really easy to gather resources.
Most of the post-1.8 things (and especially the 1.8 things) started taking away difficulty, though, especially sprinting.
Not sure if I'm too good at Minecraft now.
Or if the games too easy.
I think the first one is more likely
It's probably both.
I've been playing Dwarf Fortress for a couple of months, now, which is roughly how long it took me to get good at Minecraft. I consider myself to be "good" at DF, but even still I die frequently.

Did something happen to you in your childhood to give you this unreasonable fear of rutabaga?
How has the hunger bar lowered the survival aspect of minecraft?
Think about it: The hunger bar has auto regen, so all you have to do is make sure it's full and fight. And if you get low, back off for a few seconds, and your at full health.

It is too easy , you know why?
Cuz when anyone suggests something that will make the game remotely harder in any way, it gets trampled and beaten to death.
It's funny how people hate how easy it is yet are so willing to shun any ideas that may add a slight amount of difficulty.

True that!
Also you inspired me to say something: Nether Quartz should be located under lava oceans! There is much more exploration to do there and it is unsettling to be mining under a giant lava ocean!

I said this topic is for vanilla minecraft, not custom maps or mods.

Oh! and there should only be 5 iron veins in one map.
have you tried Hardcore? If you play on ''Easy'',or Normal,or Even Hard of course that it might be easy to yourself.Play a difficulty that suite
yourself. If you beat the 2 bosses in minecraft in hardcore, then you can come back and say that is TOO ''easy''.Minecraft Alpha was very hard, you can go back to that version if you want.(Also you can try some Hardcore Challenges too)

Hardcore is not a challenge. Both bosses are also pathetically easy, and the Wither doesn't even constitute as a "challenge".
And, downgrading is not an answer. I want to be able to play with the new features, but to do so I would have to play on an easier game. If I wanted a challenge, I would have to play without features I like.

Comments in bold.
It hasn't lowered the survival aspect, but it has made the game easier due to it's regenerating health.

5? I dont want MC to be EXTREMELY hard! Or do you mean chunk?
Accomplished!
