I can't find a straight answer on this. Any thread on the topic has some posters saying that all mobs despawn, while some claim that since some version or another, passive mobs like sheep no longer despawn, so you can create sheep farms where the sheep do not disappear.
So, as far as sheep on a survival multiplayer server: do they despawn in the current version or don't they? If so, under what conditions? Please provide some sort of link to the version information or some other evidence, since I have seen unfounded claims for both. I'd like to collect some sheep to breed and farm their wool, but I'm not going to waste my time on it if they will just despawn as soon as there is no one around.
passive mobs like chicken, pigs, cow, sheep and mooshroom does not despawn or respawn from beta 1.8 or above(not sure about beta 1.8 prelease). squids however, they will despawn and respawn.
if you are making an animal farm in multiplayer server, make sure that other players cannot reach it and kill it.
If they don't respawn, where do they come from? Just breeding? If you kill off all the passive mobs in a chunk, will that area just never have animals again?

They spawn on chunk generation and can be bred. They do respawn, but the respawn rate is so low that it's not worth mentioning. I believe respawn rate is 200 times less than what it used to be.
There is three cases in which passive mobs can despawn
1. If its a bat which is a passive mobs by behavior but hostile in the code allowing it the despawn if the light level is above 4
2. In the xbox and ps3 versions theyll despawn if theyre not fenced in a area of less than 20x20
3. If the code in your game gets corrupted and a passive mob is renamed as hostile
Actually, bats are an entirely different class of mobs (ambient) with their own rules; you must be thinking of ocelots, which are coded as hostile mobs but are passive and despawn unless named/tamed. Similarly, squid are water mobs, not passive and also despawn; otehrwise, no true passive mobs EVER despawn (and I seriously doubt "code gets corrupted" makes the game think a mob is hostile; barring some big goof-up which would be quickly patched; more likely, the game (or your computer) crashes if such corruption is occurring due to bad memory, HDD, etc).
Also, a more likely reason for mobs "despawning" is due to a serious bug (serious enough that some people stopped playing, according to the comments there); just yesterday I started my game and one of my villagers suffocated and died just standing next to a wall (at least they will replace themselves and I don't actually use them for trading); you'd think they would make mobs smart enough to actively try to get away from a wall if they are suffocating, unless they were actually inside the wall; should be simple enough to code (check surrounding blocks for air blocks, then move in the direction with the most air, should work (be able to move) if they aren't actually inside a wall). I also see this often with horses when flying around in test worlds - they simply suffocate and die while standing next to a hill and clearly not actually inside of any blocks.

Or in other words, despawning and whether a mob is hostile are two entirely different things (also, light level has nothing to do with bats despawnng; they spawn in light levels of 4 or less, just as hostile mobs spawn at 7 or less - but despawn regardless of light level)..
