In spectator mode, when you right click a mob it should open its viewpoint as a small box taking up the lower right 1/4 of the screen. This would allow you to watch from two different perspectives at once, or even witness things happening in completely differently places.
You will still have your own viewpoint taking up the other 3/4 of the screen, and could continue to move around freely or even possess a different mob.
You could close picture-in-picture by right clicking again. It would also close if the chunk the mob is in becomes unloaded.
This could be an interesting snapshot. When you do it, would you be able to look around as the mob, or would you have to look in the direction the mob is walking.

If you are in the snapshot, you type /gamemode 3
Then you will pretty much be able to noclip and when you click on a mob or player you spectate from their viewpoint (try an enderman, creeper, and spider :D)

The big question is, while you in the mob pov, what if another mob comes up and starts attacking your
soulless body?
Spectator mode doesn't work like that. You don't really have a body per se. Nothing except other spectators can see you, and you can't interact with the world in any way. You're invulnerable to damage and all outside forces. When you "possess" a mob you don't leave your body behind, you're just basically locking your viewpoint to the mob and following them around.

And maybe there would be a way to spectate from a mob/player's perspective this way when you're in another game mode. An OP could be in creative, but still see from another player's eyes.
or a command accessable only to ops, the /spectate command, which would activate the PiP mode to show whoever they plan to spectate's view, so that if a player is suspiciouis, they can be watched, to see if they are doing anything like digging straight forward then sudenly down, as many X-Ray users tend to do,
