and to get the egg i think maybe it should be like a silver fish thing after you break the egg and it falls into your inventory a mother will spawn and try to kill so arming yourself would be necessary so you wound't die like preparing yourself to fight the ender dragon or the wither
also when you breed the griffons the baby shoundt be tamed right away that way you can you sell the untamed baby to a friend and he will tame it and if you want to tame it give it some meat or fish or whatever griffons eat

I think that there should be different types of gryphons. Like some built for speed, some for battle, and so on. The way to get the types, would be markings on the nest. Different markings on the nest would mean the types, like a swirl for speed, and an axe for battle. Stuff like that. Then you would want to make a little mini version of that shape for the baby to see. It will "learn" that type. The battle would be better at combat, speed better at flying, defense, more heath, and things like that. I think that would be a good addition to gryphons.
However, I'm not sure if they should be in vanilla, it just doesn't fit right.

To balance it out a little more you should have an energy bar for the gryphon that depletes a little with each flap and slowly restores while gliding and restores much more quickly while on the ground. The bar would be visible while riding the gryphon much like the jump bar for horses.
The energy for the gryphon doesn't automatically reset once you dismount - in other words you couldn't quickly land and then take off once more just to fly farther. The gryphon should have a need to rest. Also if you lose all energy in the sky the gryphon would have no choice but to glide downward (it wouldn't take fall damage) and would regain no energy while flying.
This may sound like a crippling feature - but realistically the gryphon is carrying on its back a "fully grown human". This is about one hundred and seventy "pounds" of weight its not used to carrying.
Also this would balance out pvp problems with grypons carrying people into enemy castles like they owned the place.

Exactly, Mo'creatures and the addition of the horse is a prime example.
Also, Gryphons should be able to find nearby gold ore somehow. Maybe they would point their head towards it if it was less then 64 blocks away or something. However, they would get tired from finding gold, and need even more food than usual. Or maybe you would even have to give them gold ingots.
One problem I do see is that you have to keep pressing spacebar while flying or you will plummet. What if you were on SMP and had to message somebody? The answer is you die.
One way I see to fix this is a "No texting while flying" video campaign in order to convinced players to be safe-riders. But thats a terrible idea.
How about if you press "T" to talk, you hover midair while you are typing. This could be abused, but otherwise you won't be able to talk at all while flying (Assuming the griffin falls at a rapid rate). Sure there is things like skype and teamspeak but not everybody has access to those.
Overall its a nice idea, and I think you did a wonderful job of balancing it. Support.
I hope this doesn't sound stupid but i Personally think the griffins should be a bit bigger especially if ur gonna ride them but they don't have to be much bigger maybe just double the size they are in the pic they're pretty big anytime i seen them weather in harry potter or W.o.W

I agree with you about the size; as a rule of thumb, if you're able to ride it, its at least twice your body weight, if not more, since most animals can't support more than a third their own weight on their backs.So, if a Gryphon was to be able to have a full sized adult human male on its back, and FLY with him, at a minimum, it'd probably have to weigh in the vicinity of around 1000 to 1500 pounds, or more, and likely be at least as tall as a horse at the shoulders, around 4 and a half feet, maybe 5. 6 feet if you want a "King" gryphon breed. and the wingspan would be enormous, at least 30 feet if not more

Well, Gryphons are mythical, and minecraft is not very realistic. So they don't need to be as big as science may suggest. Just big enough to look good.
