I hear what you're saying with your rebuttals, but i have to say something about having to feed your baby Gryphon...
You said that no other animals do this, but when i was playing around with horses in the snapshot, i was feeding baby horses hay and it was making them grow. Now to be fair, that didn't exist when i suggested Gryphons. So it would have actually been an exception, like you said.
Also, the eggs wouldn't hatch on your own. You'd have to incubate them for a couple of in-game days. I was thinking the player would probably place their Gryphon egg on either a dirt or a hay block, and then place a torch directly above it. Or maybe some type of redstone ritual like you said. The player should definitely have to do something to manually hatch it.

Now that I see how you hatch the egg, I still think that the power of flight should require at least a few late-game materials. The last thing people want is to start flying before you even acquire Iron Armor.
That is the reason why I advocate powered flight. But still, your suggestion has merit.

Maybe you can craft a 'Gryphon Hook'. What this would do is if a Gryphon rider came down to grab you, you could hook this on to their saddle, and be able to yank it. This would not only bring off the saddle, but make the Gryphon go crazy, killing everything in sight, even the rider!
Depends on what Fantasy series we're taking them from I suppose, but I agree with you, they should be neutral; after all, I very much doubt Mojang would make them full blown NPC's like villagers....

The future existence of dragons in the overworld are already planned, and they will surely be tamable and flyable, but extremely rare and difficult to get. The idea of having a bunch of lion eagle hybrids that everyone flies everywhere seems just a little game breaking.

Angering it though, probably not too difficult.

As for the gryphons, could we have different types? Like a snow gryphon in the tundra, a mountain gryphon in the mountain and a plains gryphon in the plains. The Plains being most common, while mountain and snow could be rarer. The Plains could look like what you said they would: a typical gryphon. Maybe the mountain could have a sleeker body and different colours: maybe blue tinged feathers. Like half mountain lion/cougar and half some sort of mountain bird. (I don't know, I'm not sure at the moment.). Then the snowy one could be half snow leopard and half tundra bird.

I'd imagine that other than color differences there would be size differences and other differences ranging from more flight time to more agile to more health.
For example, if you had a Forest Gryphon, it would be smaller, but far more agile ( it'd spend most of its time hunting amongst the trees where it would have to dodge well) than say a Plains Gryphon,. which, not having to be so agile and likely with a larger food supply, would in all likelihood be larger, stronger, but not as fast.

Rampage? never as far as I am aware, unless the horses rider was a **** and treated it wrong. Panicked? On occasion. You are also forgetting the differences between a herbivore that has a herd instinct and a creature thats a carnivore with a pack mentality; if you're a gryphon and the Human who is your Alpha suddenly falls off your back for no reason, you're likely going to be wondering what the hell is going on, and be very angry if anything has happened to him/her....
That and, using the premise that the human in question raised you from the egg, you'd be wondering what happened to Mother/Father....
if it's only a "little faster than walking and hard to use" then it's pointless, if it was at least as fast as a horse when flying then all the rest would definitely balance it.
you forget; its flying. thus, all the pesky terrain thats in your travel path, you can fly over. Even if you aren't actually traveling very fast, you'd still be faster than a guy on foot, due to the fact that he has to detour or climb/descend obstacles......
The gryphon idea is cool,but maybe where a nest is there should be some things around it in the area hinting that there is a nest. like random stone blocks,quartz,leaves,wood anything that hints to a nest

Rampage? never as far as I am aware, unless the horses rider was a **** and treated it wrong. Panicked? On occasion. It sounds very entertaining.
I really like the lance idea, and I think that combined with horses would be amazing, but I don't think a holder item is really necessary.
