To be honest, i don't quite know how to put my answer into words. But if enough time goes by without Mojang taking notice of us (I want to give it atleast a year), i will probably end up asking somebody to turn this into a mod. I've still got a few things planned in the mean time, though =D
As an advocate for powered flight, I normally disdain from flight being obtainable from tame-able mobs. However, you do bring up some strong points, so this idea has merit. I've noticed that most flight from a mob suggestions bring up the same arguments for it's inclusion. Here are my rebuttals:
It is found in the Extreme Hills Biome, making for a treacherous climb!
Extreme Hills are actually stupidly easy to climb. In fact, since you are so high up anyway, you could easily spot them.
You must feed it everyday with X and Y food to make it grow up
None of the other animals do this. Why should this animal be an exception?
Food is plentiful and renewable for experienced players, so this is a non-issue for them.
Flight is quite restricted
There is a fine line when balancing that. Too restrictive, and flight will become useless. Too lenient, and it could become overpowered.
As a side note - the method at which you control the Gryphon is inside that line, so I approve.
YOU MUST BOSS DEFEAT
What if somebody wanted to build a mountainside headquarters? Take note - your suggestion does not have a boss to defeat, so this does not apply to you.
So, my main beef with the suggestion is that the Gryphon is too easy to acquire, seeing a mineable block found out in the open. If it hataches on it's own, a new player could end up finding one and having an advantage over an experienced player. However, controlling the Gryphon is well balanced, so I....
partly suppourt. Perhaps a more difficult method of hatching the egg (a ritual with Redstone?) would better balance the Gryphon. I'm on the fence.

I hear what you're saying with your rebuttals, but i have to say something about having to feed your baby Gryphon...
You said that no other animals do this, but when i was playing around with horses in the snapshot, i was feeding baby horses hay and it was making them grow. Now to be fair, that didn't exist when i suggested Gryphons. So it would have actually been an exception, like you said.
Also, the eggs wouldn't hatch on your own. You'd have to incubate them for a couple of in-game days. I was thinking the player would probably place their Gryphon egg on either a dirt or a hay block, and then place a torch directly above it. Or maybe some type of redstone ritual like you said. The player should definitely have to do something to manually hatch it.

I've been floating the suggestion to add gryphons for a long time in the "Mob adding" mods like 'Mo Creatures, but everyone seems to enjoy dragons or dragonesque creatures better.
Heh yeah i've noticed a lot of people really want to see dragons in Minecraft. I love dragons *takes brief glance at his Skyrim map hanging above his computer*, but personally, i don't think they would ever fit into Minecraft as mounts or tamable mobs.

I like this idea a lot, maybe I will try to get it into my mod, whenever I get a chance to start.
just wish to throw this in; Gryphons hate horses (a lot of the mythology around them is that men on horses kept stealing their treasure so they attack horses as a sorta revenge), so it'd be interesting ( if this is added in via mod) for it to attack the horses from the 'Mo Creatures Pack when wild IE the gryphon is out hunting. If tamed or hatched, though it wouldn't attack.... much. After all, a gryphon able to support the weight of a man is going to be big no? And eat a lot of meat? And what is a horse, after all is said and done, but a lot of meat?
I definitely like the aspect that gryphons get hungry and start behaving badly. Maybe even slashing through some materials.
Also, flight mechanics:
Need to accelerate to take off! Take time to accelerate on the ground.
Accelerate at around 10 m/s^2 on the ground and are hard-capped to some basic speed (perhaps 7.5-15 m/s, same as a horse on average.)
can be tilted up and down to climb or dive by pressing W or S.
Use 3-coordinate velocity in flight and transfer momentum from the ground.
Flapping accelerates 5-10 m/s forward, relative to the gryphon's position and rotation, it has a cool-down of 1 second, and consumes some of the gryphon's energy (different than hunger). Spacebar to Flap
Doing nothing will cause a gryphon to have low friction forwards and sideways, and high friction upwards and downwards (all relative the gryphon's angle)
When moving downward or upward, the forward/backward angle is important because friction is applied in the direction of rotation, which means that going down while looking forward will result in "falling out of the sky" and going down while looking slightly down will result in gliding and gaining a lot of horizontal speed.
A and D would be used to turn the gryphon and rotate slightly edge-wise, this would cause friction to be applied which would slow the gryphon, but it would still be able to maintain some speed after turning.
Players would be completely free to look around using the mouse, fire weapons, etc during flight. This would have no effect on steering.
If a Gryphon hit a mob/player, it would attack the mob/player and pick it up, the attack itself would deal 4 hearts of damage. If the gryphon becomes injured, it will drop the mob/player.
Gryphons could also crash, if a gryphon hit leaves, they would accelerate it by 2 m/s toward it and then break if the gryphon was still moving toward it, if it hit glass, it would accelerate by 10 m/s in that direction and take damage in hearts equal to its speed beforehand in m/s. The glass would break if it was still moving toward it.
All other blocks would simply stop the gryphon's momentum in the direction of travel and injure it by (the amount of speed reduced)^2/5-20 half hearts. (e.g. a 20 m/s head-on crash would deal 30 hearts to the gryphon, killing it.)
Obviously, this means a safe landing has a maximum speed, specifically, 10 m/s.
Health: Gryphons would have a relatively modest amount of health for their size, nevertheless, they are large predators and need to have some toughness. 10-20 hearts seems appropriate.
Attack on the ground: Gryphons on the ground would deal 4 hearts by pecking viciously at their enemy. They would primarily attack if hungry or if attacked.
Food, Hunger, Energy and Hunting:
Gryphons would regenerate health very slowly (2 hearts/ minute or so), but do so as long as they had one point of hunger.
Gryphons would have 20 points of hunger, and it would decrease on a continuous basis over the course of several days. They could never starve to death, but would be rendered unable to regenerate health or energy and starve to 50% of their maximum health.
Gryphons also have 20 points of energy, Healing the entire bar takes 2 minutes and 2 points of Hunger to do. Flapping costs 1 Energy, Running costs a point every 10 meters. Attacking drains energy by 1 point per attack, be it aerial or ground-based. Attacking would however still be possible with no energy, with a -33% damage penalty.
At 15 points of hunger, a tamed gryphon would screech at its master for food. Wild gryphons would attack animals at this point, sheep killed by a gryphon would drop meat. Horses would drop as much meat as cows. Gryphons would eat the drops.
At 10 points, Tamed gryphons would ignore being tied to a fence post and start looking for food, they would also be able to eat directly from a chest and check chests for meat. Wild gryphons would, at this point, eat anything that drops meat. Hostile mobs, even spiders, would be on the menu, as would the player, who would drop porkchops the same as a pig.
at 5 points, tamed gryphons would start hunting anything and everything that drops food, player included.
I think untameable adult gryphons should be near the nests to make the retrieval of the egg a bit more exciting and challenging. The adult gryphons would sleep on a perch during the night, giving you a bit of options in getting the egg because you could choose to use stealth or force. It would also be cool if gryphons could latch onto objects or mobs and carry them, depending on the size of the mob.

You did read the entire topic post right? Gryphons are extremely balanced, not game breaking at all. And dragons are by no means a certainty. Mojang has said that they would like to add dragons, but enough things Mojang has said didn't come true.

On October 12th 2011 Notch announced Red Dragons "After release, I will totally work on slightly less dangerous dragons that don't destroy terrain and can land and whatnot. They will be red."[3]
On October 12th 2011, in a Reddit post Notch also said. "They will be different dragons. The Ender Dragon will probably become larger, and the ones in the main world will be this size, won't go through terrain, and will be red because dragons are red."[4]
At Minecon 2012, Jeb was asked about Red Dragons. He acknowledges that the Dragon Egg item currently has no use and that it is possible to be used for Red Dragons.[5] He explained that one of the main reasons they are not a high priority to add is because coding them would be difficult. He also makes the example that Ender Dragons fly through terrain as a workaround for the type of coding Red Dragons would require.[6]
I ask you to defer to my knowledge, as I've been keeping a extremely close eye on red dragons ever since news about them came out. Thus far, there has been nothing new for a looooooonnnnngggg time. I would not call the existence of dragons in the Overworld "Planned" anymore than I would call them "Certainly Tameable" and "Flyable".
Also, if you had bothered to read at least SOME of the posts in here, you would see that people have put a IMMENSE amount of thought into gryphons and how they'd be implemented; in contrast, I see little to no thought behind your post. If you want to tell people "It won't work" give us VALID reasons why.
And also, Red dragons would be just as "Game breaking" as you claim Gryphons would be; you'd be able to fly Red Dragons "Everywhere" too, no?
Hey guys! Haven't posted in a while on this topic. Anyways, I've come up with an idea. Dark Gryphons!
Dark Gryphons are rarely spawned Gryphons, colored black and red with evil, soulless eyes, and could be considered the boss before the Wither or Enderdragon. It flies high in the darkness of the nighttime, and when one approaches, a boss health bar appears. It would have x5 as much hearts as you, and be x2 larger than normal Gryphons.
Attacks:
1. Swoop. The Dark Gryphon would swoop down on you as it approaches and is never repeated. Damage: 6 hearts without armor.
2. Talon grab. Essentially the same as you may be able to do with your Gryphon, except it's on you. Damage: 5 hearts with armor, plus fall damage. You can break out by attacking the Gryphon.
3. Haze. The Dark Gryphon spews out Toxic Gases, and if they touch you, deals 2 hearts of damage and has 75% chance to poison you (Piercing armor, so armor won't protect you.)
This is such an incredible idea! I would say that the gryphons would be VERY well balanced and would be incredibly useful in terms of... loads of things! I really hope this gets implemented in 1.7 or 1.8
Another thing to add::
When you're looking down while riding, you don't look straight down, but instead lean over to one side, both in camera position and in animation.
This would allow you to look under the gryphon for whatever reason(which is good), and also to shoot people below you(which is bad, maybe) without mortally wounding your gryphon(Which is Darwin Awards, grade-A derp.)
This would work for horses too.

Depends on what Fantasy series we're taking them from I suppose, but I agree with you, they should be neutral; after all, I very much doubt Mojang would make them full blown NPC's like villagers....

On death, drop 2 stacks of feathers plus tons of experience and rarely a Gryphon egg.
