I've seen texturepacks where the creeper can spawn with a blue or red coloration or skeletons spawn with clothes or eye patches.

You're using Optifine then. It has a watered-down version of the same mod included as part of it. Check the Optifine thread for information on how to do that then.
You should make that when you hit sheep, cow, chickens, and pigs their AI will adapt and they will start to run away from you the closer you get to them.
But this should only happen with a system that detects how many times you have hit a single mob or group and a herd should stay really close together and run together if attacked.
Also wolves should attack cows and pigs and cats and since those animals see them as a natural predator sheep, cows, and pigs and cats should run away.
