well I heard about an update where you can find horses and I got the latest update of minecraft on my xbox a few weeks ago but there were no horses anywhere or baby villagers or anything, just jungle wood and an ocelot and that redstone lamp.
I think it's only out on the PC for now, I'm not completely sure because I don't really pay much attention to the XBox version. And before you say anything about it not being fair that PC gets updates first, the two versions are made by two entirely different teams. I'm pretty sure the two versions are built in different languages anyway, so it's not as simple as the PC team handing the update stuff to the XBox team, either.
The PC and XBox versions of Minecraft are distinctly different, due to differences in development cycles, system capabilities, software translation issues, and of course Microsoft's strict control over their platform. The PC version will therefore have things in it that the XBox one doesn't (or doesn't yet). Horses are one of those things.
Myself, I play both. If you've got a decent PC around the house (don't let the blocky graphics fool you; it can be a resource hog at times) IMO that's a good approach.
The Xbox Edition is most like the PC as it was a little more than a year ago. The Xbox Edition was released about a year behind the same version in the PC and that year's separation remains. 4J Studios (who are the company contracted by Mojang to rewrite the game in C++ (the PC Edition is written in Java) have promised horses in a future update.
In addition, the Xbox 360 has a mere 512 MB of RAM and processors that are from technology that is 10 years old. The PC Edition has system requirements that are much higher than the Xbox has (2GB RAM, etc.), so it is a bit unrealistic to expect that everything the PC Edition has now can be "squeezed" onto an Xbox and still have the game run smoothly. As a result, 4J are having to do a bit of picking and choosing about which PC features they will skip over. They also desire to make up for this a bit by adding some Xbox exclusive features (although currently adding these exclusive features has been more a desire expressed by them than a certainty). Furthermore, it is also likely that they will eventually just "hit a wall" where the Xbox 360 will just not handle any more "stuff" being put added into the game; and expecting that 4J will effectively rewrite the entire game in order to add more "stuff" is somewhat unrealistic as well. It is likely that over the next several months or next couple of years, their focus will change towards the Xbox One and PS4, which have far more potential for expanding the game into the long-term future.

We can but dream.
Since the XBox worlds are limited in size, I don't miss horses all that much on the XBox. But I'd still like to have them. Maybe some day....

4J has said that horses will be coming in a future update. It was a while ago, (I think) right after horses were officially put into the PC version.
