Hey guys so I make minecraft videos already but for some reason the last day or 2 I haven't been able to record because when I start recording the frames go from 120fps to 60fps and jump down and then back up and down and it's like choppy for some reason. About a week ago I could record Minecraft at 120fps-100fps no problems without any choppyness, and the funny thing is I can record Borderlands perfectly fine, world of warcraft fine, amnesia the dark descent fine, but minecraft just doesn't seem to want to work for me? any ideas would be nice because I would really like to fix this!

Honestly 30 or 60 FPS is fine for video because most monitors don't display over 60 and I'm pretty sure Youtube cuts the frame rate to 30 FPS anyways. But anyways, Minecraft is sort of a demanding game that isn't as optimized as most other games, as far as I know. That may the case.
No like this video is actually getting choppy/slight freeze now It's never done this and I'm thinking it's my Hard drive dieing but i'm not 100% but it's usually smooth and records fine, but it's just not smooth now
Such HDD like that just is not fast enough to keep up with the demand of huge writing I/Os. Video recording can go well beyound what a 5400 RPM can write at. Which they normally cap at around 40-50MBs. While a 7200 RPM is near the 100s MB/s area. Then Minecraft has to load chunks time to time and write to disk, that adds to the I/Os.
Using or getting a non USB HDD to record to is a very viable option.
The ram was on sale:) so I got 16gb but idk it might be the harddriveI recently moved my harddrive into my new computer case, and for some reason everytime I turn my computer on it wants to check my C: drive for lost files or check it something like that, I could give more info if necessary could that been a sign or something?
Yeah, I was checking some of the retail boxes out and the 1TB, 2TB, 3TB and 750GB drives were all from china, while the 500GB, 250GB and 320GB drives were from Thailand.
WD is doing something similar as well but instead of China it's Malyasia and the drives don't appear to have any issues....... so far at least.
Keep in mind, WD also = Hitachi and Seagate also = Samsung.

Your framerate will do that when recording, that's just how it is. Recording affects performance.
Are you actually suffering performance problems or is this because the number in the corner goes down? If it's because of the number, this is normal.
Even top end computers struggle to play raw fraps files, this is normal. You need to edit and compress the footage to play it back.
Mine plays raw fraps footage back fine...
OP: Might be your slow hard drive. And why so much ram? :/

WD Caviar Blacks are overpriced. Either get a Barracuda 7200 RPM or a Caviar Blue.
