The smooth sharp color contrast is a different thing, and has nothing to do with smooth edges or AA. And textures dont have jagged lines by themselves, its the meshes and shapes that can cause jagged lines. Textures are only there to fill the meshes, to "fill the mold" so to speak. Non-edged Aliasing can only be smoothed by either Supersampling AA or transparency AA.
About your issue, I can barely see it on the screenshots, let alone while playing the game. Maybe I have the same texture issue and I never noticed it. I dont use the default texture pack though, so I'm not sure.
Still, I have to say that its pretty minor and not serious at all. Why are you so bothered by this?
I guess I'm a perfectionist, but I was just reporting a bug. Anyway, if, for example, you look at a normal sheep's face, you'll see the difference.
EDIT: I found a fix. All I had to do was turn on custom fonts. Weird.
I get around a 50% to 100% boost in FPS, with settings above what I used to have. Now I can us an HD Texture pack that I like too. This has to be the best mod out there.

Pretty sure its your texture pack, and not Optifine thats doing this. I've noticed that some Tex packs make the water look almost completely transparent, which isnt pretty imo.
I'm not using a texturepack though. I build everything in Default because if it looks good there, it's likely to look great in anything else.
If you happen to have some sort of water shader installed, that may be the cause of your problem depending on how you installed it and OptiFine together and how you have certain OptiFine settings configured.
In addition to the "Clear Water" setting, there are other settings for water including under the "Details" section for "Default, Fast, or Fancy." Try changing that and see if it makes a difference.
I don't actually use any other mods that apply to water/lava/liquids. I read that installation order may be the problem too, particularly if Optifine was installed late in the list of mods installed, so it was installed right after Modloader (which is required for other mods). Unlike most people around here, I'm actually only using very few mods comparatively: Modloader, Rei's Minimap, Single Player Commands and WorldEdit CUI, Treecapitator, Starting Inventory, and Zombe's Modpack.
I had Details > Water set to Default. I changed it to Fast and completely restarted the game, but the water was still invisible. Then I changed it to Fancy, completely restarted the game, and the water is still invisible.

I fit is YOUR texture pack, you need to go into your Minecraft.jar/OptiFine.zip and find the ctm.png or something. Copy it out and edit it as you please. Then put it inside your texture zip. Don't put it in ANY folder. Then turn on CT.
If it is not YOUR texture pack then go to the post and request it done. Be sure to check if it has already been done. If it has/after the creator has made it put the png into the original texture pack zip file. Hope this helps!
I know how to do CTM, my pack already supports it. Although I cannot find the template for VERTICAL connected textures (reeds).

In OptiFine all custom textures are scaled to fit inside the "terrain.png" or "items.png". This includes the ModLoader textures
Hello! Thx for your super-awesome mod and such) I hava a question - my laptop is 4 core and multicore optifine doesn't seem to work with more than 2 cores. Is there a possible solution?
And btw, I use these 2 unused cores to run a server and my friends have ~150 fps and I have 50fps at TOP (with RP and BC stuff it is ~20 actually). I understand,that might not be optifine, but..why? 2 cores working on server are not working with minecraft client,than why fps is so low?

Actually, OptiFine should be installed LAST (unless otherwise noted by the mod itself of which there are not many exceptions to that rule). That could very well be your problem.
I don't remember if you mentioned this already but, on the main "Video Settings" page, have you tried changing the "Graphics" setting between Fast/Fancy?
What about the Advanced OpenGL option on that same page?

The same as horizontal, only difference is "method=vertical"
