I've read the wiki about hunger/food saturation and I'm afraid if it answered my question, I did not see it.
My question is: bread restores 2 1/2 of the hunger bar, but say I am only one hunger bar down, if I eat the bread at that moment (instead of waiting for my hunger bar to be 7 1/2 total), does my food saturation level get filled even more because of the excess food or no(therefore allowing me to not eat for longer)?
I'm sorry if I'm explaining this badly. If I am I shall try to clarify even more.

I think the food saturation bar fills up to equal your visible hunger bar (ie if you were at zero and ate 3 steaks then you would have the equivalent of 20 meat stick icons)

If I'm assuming right, bread will restore what you said 2 1/2 of the hunger bar. If you eat 1 bread when your hunger bar is 9 then it will consume the bread and it will not go over. It will just restore to 10. Once you get to 10, you can't eat food anymore.

I'm afraid I'm speaking about the invisible saturation bar. I am wondering if eating at only 9 hunger will add excess saturation than if I'm just eating at 7 1/2 hunger.

The OP is referring to food SATURATION, not the hunger bar. Saturation is a quantity that determines how long you can go before having to eat again. It has nothing to do with the 10 drumsticks. Foods with higher saturation (such as steak and cooked porkchops) allow you to go without eating for longer than something like a melon slice or cookie.

I'm not too sure what you mean when you're talking about saturation. Do you mean like extra hunger? If I'm understanding right, it shouldn't add extra saturation because the max is ten.

I don't think I'm understanding correctly.
Every food item has an additional food saturation stat which will fill up and prevent your hunger bar from depleting for a while after you've eaten.

OK, I think I have the answer. Looking over the Minecraft Wiki and doing some reasoning, I came to the conclusion, No. Eating a piece of break at 18 hunger (or 9 drumsticks) doesn't cause the food saturation level to get filled even more because of the excess food.
My reason is that each food item has a set "Saturation Restored" number and a set "Nourishment Value" which means that the two numbers have to be fixed in order for the ratio to be a set number.
My answer is that the food saturation level will not get filled even more because of excess food.
Well, jumping 20 times should decrease your food bar by half a point. So you could always try eating a peice of bread and if your hunger hasn't dropped to 95% after 20 jumps then it means it filled up your hunger saturation bar.
