I was riding on my boat and noticed my wolves I just tamed weren't following me. I go back to them and start to slow down. I accidentally hit one of my wolves and I instantly died. when I used another boat to get back to the spot I died at I also noticed that my first boat wasn't even destroyed. I lost like 8 levels because of this.
How the hell did this happen? I was at full health/hunger and wearing full iron armor I had just made also.

You should be aware that boats have been buggy for months now and Mojang has made no attempt to fix them and the numerous other half finished stuff they put into the game.
I first experienced boat instant death sometime during the 1.9 prereleases, though I don't remember which one exactly. Just don't let your boat come in contact with any mobs and you should be fine.
Yeah boats are buggy still. I had the whole game just crash riding in a boat no warning just desktop. Loaded back up and brand new boat was gone while I was sinking down in the water.
Boats and Minecarts are now able to transfere damage to the player if they detect long falls. Boats and Minecarts do this a little differently, but the result is the same. Mojang did this because there were players that used boats and minecarts to avoid damage from very long falls. It was possible to run a cart or boat from a tall cliff or mountain without taking damage even if you hit solid land.
Apparently, it still needs a little bit of tuning. My only advice is to avoid hitting the shore on a place with deep waters or animals at sea. Or to jump out before hitting anything. You'll find the same with minecarts. If you have a track with gaps and long falls you must make sure you jump out before you reach the end of the track. Or else you'll die. (Will not happen if you have a stopper block, it's only if the cart hit the ground outside the track.)
You can still use boats to cheat death after long falls, but you need to jump out of the boat before it hits the ground. You can even prevent all damage this way, but it can be a little bit hard to time it correctly. The player can't fall more than 3 blocks. Anything more and you'll take damage normally.
So, the boat do damage to you for a reason. It's to stop usage of boats to prevent fall damage. Unfortunatly it can have some unintended side effects. I expect them to tune this further in a future patch.

Boats do not work fine, they are pathetic!. What boat would you ride on that has the durability of rice paper? Boats were a cool part of the game, now they are a travesty. Who cares if someone is using a boat to avoid fall damage? I loved using boats for the EATS system, now i can't because if the boat hits any current it's destroyed. Truly sad.
This is what destroys the game... it quirks like this that make the game awesome, that I can make huge drop in a track or I can have a quick escape boat to floor. Instead they "Fix" something by making it even worse than it was in the first place and then don't even bother revisiting it.

There's a difference between complaining about a bug and filing it (at the wiki bugtracker or elsewhere Mojang has stated that they check). I like Chocolate Doom's idea behind this: "File a bug report or it doesn't exist." This idea was adopted because it's very hard to track bugs without some regulated means -- in this case, a bugtracker on Sourceforge.
I just took a look at the Known Bugs page of the wiki, and found no report on any bugs about boats killing people because they hit mobs. Perhaps if you actually want this bug fixed, you can make some sort of effort to notify Mojang about it rather than sit at a forum that most Mojang officials have confirmed that they don't have enough time to check thoroughly and complain.
Yo for serious me too! AND I WAS ON HARDCORE. I had just left the Nether with plenty of blaze rods. **** sucked. I have the begining on youtube... Just search for Minecraft hardcore bones so bright they glow. If you want to see it.
I remember seeing the lighting bug getting brushed aside by Jeb saying it doesn't happen to him so it only exists on old machines so there is nothing to do, on his twitter. I cannot bring you the link seeing as it was months ago.
However on the server I played with (Gaming Clan) every single one of us suffered that lighting bug, perhaps it has been fixed. I have little hope Mojang fixing bugs we ask to be fix and what they perceive to be a bug and is in fact a balance issue.
The only lighting bugs I've seen (painting bug, stair bug) have been fixed, heh. Both of them were just oversights with the lighting rewrite.

In this case, provided that the reporter and others can get some test cases that demonstrate this bug, (a video or something would do, as well as steps for an accruate reproduction. Since others are experiencing this, I doubt this would be hard) it's entirely likely that something might get done about it -- because as mentioned with Hardcore mode this could potentially be a serious bug.
I'd rather they left in a glitch like no-fall-damage carts/boats than punish players at random who are using boats correctly.
Players who play legit are likely not going to exploit the glitch. And those are the ones who you want to retain.

The best part is that they break because of a glitch when you click on the boat to get out that makes you sink through the boat as if it wasn't there sending it into the nearest land at full speed so it can break.
