You interpreted this wrong. I'm pretty sure he means that moderators will be able to get onto the server in Creative mode regardless of the mode the server is in. So they'd have the flying ability and such without the need for mods.

Not exactly, but sorta. He wanted to have MinecraftCon 2011 on the release day, but for that day, all places are full simply because of the date. Not just Skyrim.
Actually, he wants the full release on the same day as MinecraftCon so when it's pushed back the full release is too.
Adventure mode itself IS confirmed - it's just not confirmed that it will come with the new modes (but it seems very likely)

I mean, people are already making "Adventure Maps", and what could an Adventure Mode do that these maps can't other than enforce a specific set of rules that anyone playing an Adventure Map could willingly follow. Only more flexible, because the Map creator can specify whatever rules they want instead of needing them to be programmed.

Adventure mode was confirmed to happen AFTER release. We are not at release yet, so it not comming out is not suprising. Also, adventure mode was not about adventuring out and exploring the world, it was about puzzles and dungeons. The fact that the update to reward exploration is not the mode designed for puzzles is no surprise. Just becuase he hasn't said "I will do adventure mode" every month doesn't mean the plans changed. He also said years ago that we would have NPC villages, and we are just now getting hitns of that being updated. Also consider how much content in the game is practically tailored for adventure mode. Redstone was explicitely added for use in adventure mode. Pistons are an ideal addition for adventure mode.
Just because the adventure update happened to have a similar name but was not adventure mode does not mean that adventure mode stopped being confirmed. They said the adventure update wasn't adventure mode, not that adventure mode won't exist. Nor is it some minor detail that may have been forgotten. It was major feature with clear plans that, as far as I can tell, are well on their way to completion.

It was "confirmed" as one of the three modes at release, along with Survival and Creative. "Won't exist until after release" is not implied when it is grouped with things that already exist or are expected to exist before release.
But at least we agree that talking about Adventure Mode in the 1.8 context like the OP does is just wrong.
Yes, it was given as the justification for adding Redstone. Obviously redstone no longer needs any justification. Neither do pistons.
And Adventure Maps with puzzles and dungeons are already being churned out with reckless abandon for the players, without any need for a Mode. Notch is aware of this -- his last mention of Adventure Mode was saying that people were already doing what he was thinking of for Adventure Mode. So, acknowledgment that Adventure Mode is coming, or acknowledgment that it is now redundant?

He said "Oh, people like to do this, so I should add official support for it".

A blog post by Notch a year ago does not constitute a rock-hard promise on his part. Do not engage in the worst of game player community behavior where anything said by the developer is considered a Blood Oath. I mean are you going to complain if in 1.8 there aren't two new colors? What about Gears? Those were "confirmed" and even had a video which is more than can be said for Adventure Mode. But here we are, with no gears, because Notch changed his mind.
The two colors were in a seperate part of the post from the new content, and in context it was clear he was not actually adding 2 new colors. As far as I know, and I was playing back then, gears were an experiment, and never were confirmed. Just like the quiver, its been in the texture file for ages, but he's never said he will use it. And adventure mode wasn't some passing comment, it was a clear, definitive statement.
They wouldn't have forgotten, they would have changed their minds. Game developers do that in the course of the years it takes to put out games. They obviously remembered because they mentioned it when clarifying that this wasn't the Adventure Mode Update. They also didn't clarify that the Adventure Mode Update was a thing that would happen at any time in the future.
Does it mean it won't? No, and I never claimed it meant it wouldn't. Does it mean it's "confirmed" that it will? No. That's what I said, and I meant what I said, and I said what I meant.

There is a lot more than "the vaguest of plans". He made clear goals on when it would come out, what it was for, and what elements of the game were needed. Since then, we have gained those elements, will likely be gaining more with the adventure mode update, and are seeing structural changes in the game that could be extended to support adventure mode.
Can I say 100% sure that it will come out? No. You can't say that about anything. But I am quite confident that it is still confirmed. The tweet was "This is not adventure mode", not "there will be no adventure mode". There is no evidence to say that it is not still confirmed. None.
